Embrace the Tofu!
This tofu dish is one you want to prepare the night before, so you can enjoy all of the flavour. It takes such little time to prepare and is packed full of Asian flavour. Leave the veg and tofu to marinade as long as you can. To simplify the marinades, you can just use one for both the tofu and the veg, but I like the subtle difference of using two.
If you’re wanting to cut out meat, or transition onto a veggie diet, then tofu is a great addition. Many soy products are rich in protein, nutrients, antioxidants, essential omega-3 fatty acids and phytoestrogens. HOwever, most soy can be genetically modified, so always ensure it is organic and look for non-GMA labels. I don’t have tofu too often as it more processed than other soy products such as tempeh, but if you’re transitioning off meat, then it’s a great alternative to get you started without losing the protein or omega from your diet.
Many say that tofu is bland, but i disagree!! Marinade it with some big flavoured ingredients and you’re onto a winner. I’m a big fan of Asian flavours, so combine this with tofu to add loads of flavour and excite your taste buds.
Ingredients:For The Tofu:
½ pack firm tofu, sliced into 3
I inch Ginger, chopped finely
2 cloves garlic, minced
2 tbsp Tamari
1 Tbsp Apple Cider Vinegar
1 Tbsp Sesame Oil
For the stir-fry:
Handful of Broccoli florets, cut small
¼ red onion, finely sliced
1 green pepper, chopped into cubes
2 Spring onions, chopped
Handful of Green Beans, chopped
Add in your favourite veg here – no limit to what you can use!
Marinade the stir-fry
2 Tbsp Olive Oil
1 Tbsp Tamari
1 Tbsp Sesame Oil
½ Lemon, juiced
Pinch of Pink Himalayan Salt
Bit of ginger and chilli if you like a kick
- Chop the veg & leave in the marinade for several hours
- Add all tofu marinade ingredients to a bowl and whisk.
- Add the tofu slices and leave to marinade for an hour
- Lightly fry the tofu for 3 minutes on each side
- Serve with brown rice if you wish, or just have as is.
